In addition to being tasty Kale is a good source of Lutein for eye health and A and C. Serve as a side or enjoy 2 as a meatless meal.
2 tsp olive oil
1 cup chopped onion
3 garlic clove chopped

6 to 10 ounces Spinach
pepper salt and 1/8 tsp nutmeg
3/4 cup feta cheese crumbled (I used the basil tomato:)
1 11.3 oz can refrigerated dinner roll such as Pillsbury light version works well
cooking spray
2 1/2 tab grated fresh Parmesan cheese, optional good with or without
Preheat oven to 375
Heat olive oil, in large skillet over med heat, add onion, saute till tender aprox 8 to 10 min, add garlic saute 2 min. till browned lightly, add spinach and kale saute till tender, add pepper, salt and nutmeg. Remove from heat cool slightly, add feta.... seperate bisquit dough into 8 or 10, Roll each one by one into a 5 inch circle.
spoon 1/3 cup of kale mixture into each half of dough, fold over to close leaving a half inch border to pinch closed.... lightly coat a cookie sheet with spray than lightly coat turnovers with spray, sprinkle each with 1 tsp of the parmesan cheese. I have made them with and without this last step of spray and Parm cheese....No leftovers ever... Bake 18 min at 375 or till golden brown, cool 5 min and enjoy. Howey Gal Gail and Cooking light
