WEIGHT WATCHERS MEXICAN ZERO POINTS SOUP

Since I need to significantly reduce my calories to lose weight [see personal note below that goes with the chart here], I have been looking for recipes that are filling but low in calories. One recipe that came to mind was the WW Vegetable Soup...meets my criteria and it is a good way to get your veggies. But I don't know about you guys but I have always found that soup pretty boring. Well, I found this new version that I like a good deal better. It has kick!!

Makes 12 cups
6 cups vegetable broth

14 ounces canned diced tomato, Mexican-style preferred [I used Flame-roasted]
2 cups fresh green beans [I used a bag of frozen pole beans]
3 cloves garlic, minced
2 small zucchini (about 8 ounces before trimming)
1 cup tomatillo, cubed [I used a can of green chilies]
1/2 medium poblano chili pepper, chopped
1 medium jalapeƱo, membranes and seeds removed, minced [I used 3 T jarred, sliced jalapeno]
1 medium Spanish onion (that's a red onion), chopped
1 green pepper, chopped
1/2 teaspoon cumin
1 teaspoon fresh oregano [I used 1/2 tsp dried]

2 roasted red peppers packed in water
1 tablespoon chipotle peppers in adobo sauce found in small cans in the 'Mexican' section

Salt to taste

Heat a large pot or Dutch oven on MEDIUM HIGH. Add the vegetables and spices (canned tomatoes through as oregano) as they're prepped. Add the broth when it's ready. Whiz the red peppers and chipotle pepper in a mini food processor and stir in. Cover and bring to a boil. Once at a boil, partly uncover the soup, reduce the heat to maintain a slow simmer and simmer for about 10 minutes.

I add 1 TBSP of light sour cream in mine to cool it down a notch. I just finished my ninth cup of the stuff and I still like it.

Here is the personal note: I have been doing very well tracking my intake in FitDay lately and have been able to lose a decent but not earth-shattering two pounds per week. I did the report that tells me my average calories and the nutritional distribution for the last two weeks. Looks like 1200 calories is all I can eat and to lose weight at a respectable rate. This explains a lot.
